Today we are moving on to the salad course from the lovely dinner I had at Temecula Creek Inn, if you missed yesterday we started off the meal with a beautifully colored equally delish watermelon gazpacho (which is a cold soup). You could undoubtedly make this with any kind of seafood if snow crab isn’t available. I watch for the travelling seafood show to come to Costco and stock up on the king crab legs, a couple of those would provide more than enough crab meat for this salad.
The dressing alone is great, make sure you keep this one handy in the summer time.
